Honestly? I think I like the Shenzhou best. It had a lean, practical look to it, and a general shape that recalled the Defiant in some ways, certainly more than it recalled any version of the Enterprise. I loved the low-slung bridge, too -- that was different from any other ship we've seen before, I think, and it was an interesting new take on the general concept. I liked the look of the interior, too -- sleek and modern, but not quite as shiny and antiseptic-looking as Discovery.
That said, I can't remember the Shenzhou's registry number, whereas as soon as I saw Discovery's I knew I'd never forget it. Trust Bryan Fuller to make sure the registry number on the Star Trek ship he created was Halloween (10/31).
Brief opinions on the Enterprises:
TOS: Cheap, weirdly colored.
TNG: Floating office building.
ENT: Totally unmemorable.
Honorable mention to the Defiant, the only Star Trek ship that, thanks to Ronald D. Moore, ever functioned slightly like an actual military vessel.

I was just the right age, for TNG, that I have very mixed feelings. On the one hand, I loved it. On the other hand, DS9 was my show and I have endless wells of vague resentment toward TNG because of how it always got all the attention and DS9 always got the shaft in that sense.
